The setting

Across the port of Mandelieu-La-Napoule, protected by the walls of a beautiful neo-gothic villa, discover our flamboyant patio of exotic plants.  This is the Oasis : one of the Riviera’s most prestigious culinary institutions.

As you set foot inside, you can visualise the comfortable restaurant, its cosy lounging areas, the green patio outside and the silver-granite kitchen…  all in one glance.  Both modern and typically Provencal, the Oasis is an invitation to a world of tastes, textures and scents !

The formal dining room is bathed in warm tones of orange and light green pastels.  Its large bay windows open onto the patio and melts into its own exotic ambience.

With the first rays of sunshine, the dense foliage of century-old plane trees shelter the garden with a fresh shade of green.  The rest of the year, for lunch and dinner as well, the restaurant becomes a winter garden of comfort and modernity.

The transparency between the inside and outside spaces is the underlying theme of the Raimbault brothers’ idea of savoir-faire and art of welcoming.  Do create this perfect balance, numorous efforts have been made with renovation work from 2002 to 2006.

First, we fully rearranged the patio, creating a rock waterfall in our « Rotonde » room, then we set out the enlarge the boutique (2002).  The restaurant’s back room was extended with a Champagne cellar (2004).  Lastly, during a 3-month annual closing, the kitchen was entirely renovated (end of 2005 – beginning of 2006).

Throughout the years and thanks to the perfectionnism and will-power of the Raimbault brothers, the Oasis has maintained its historic standards of excellence.  It has become a quiet retreat where gastronomy meets elegance, where, with nightfall, a unique patio shine with culinary prowess.

OUR HEAD SOMMELIER'S BEST KEPT SECRETS : Pascal Paulze & the cellars of the Oasis

With over 450 references at the Oasis, Pascal Paulze works on a very tight selection of wines.

Because he has developped a special bond with the wine makers themselves, his A-list is naturally infatuated with biodynamic wines, grown from preserved soils and vine, in an environmently-friendly manner.

Because the Chef is fully reliant on Pascal, the wine list evolves freely, with unleashed talent.  It would indeed be a pity to try and tame Pascal’s preferences for unique vineyards and latest findings..

On the whole the Oasis suggests charming vintages, with a variety of balanced yet seductive bottles.  From wines with outstanding mineral purity to rare years that accommodate the marine quality of certain dishes…  to more mature and intense specimen that can talk back to spicers specialties !   Behold the treasures of our great sommelier !  Treasures that have the body, complexity and spirit for our cuisine, it’s foreign inspirations and deep Mediterranean roots.

The Oasis nonetheless carries the classical « Grands Crus » in Bordeaux or Burgundy, with prestigious years in Champagne and our own Oasis Vintage « Blanc de Blanc Millésimé » !

Lastly, for the greatest pleasure of wine amateurs, a special « wine-by-the-glass » menu is available so as to optimise the possibilities : for a wine-tasting meal you are not about to forget !  This particular way of serving wine is indeed possible thanks to an air-compressing technique installed by the Head Sommelier.  Glass after glass, we are thus able to preserve our best bottles.
